Nestled on the banks of the River Wye, CSONS Hereford immediately impressed us with its peaceful location, contemporary design, and spectacular riverside setting.

The combination of excellent food, locally sourced ingredients, and panoramic views made this one of the highlights of our day in Hereford.

A Beautiful Riverside Setting

Located within the beautifully restored Pavilion at Castle Green, CSONS enjoys one of the best locations in the city. Large windows and an outdoor rooftop terrace overlook the River Wye, creating a relaxed atmosphere where diners can enjoy nature while experiencing modern British cooking.

Following a major refurbishment of the historic Pavilion, CSONS opened its Hereford restaurant in late 2025. The building itself forms part of the historic Castle Green, an area that has played an important role in Hereford’s history for centuries. Once the site of Hereford Castle, the green has evolved into one of the city’s most attractive public spaces while retaining its rich heritage.

As we arrived, the friendly team welcomed us warmly before showing our group to a spacious table overlooking the surrounding greenery and river beyond.

A Passion for Local Produce

CSONS has built its reputation around a simple philosophy: “Eat Local, Taste Global.” The restaurant began in Ludlow and has expanded while remaining committed to sourcing exceptional local produce and combining it with flavours inspired by cuisines from around the world.

Working closely with nearby farmers, growers and artisan producers means the menu changes regularly with the seasons, ensuring ingredients are served at their very best. Rather than creating complicated dishes, the kitchen allows quality ingredients to shine with imaginative flavour combinations.

The Menu Experience

One feature that immediately caught my attention was the carefully selected wine pairings listed alongside many of the dishes.

Instead of leaving guests to choose their own wine, CSONS offers thoughtfully matched recommendations that complement each meal. It is a lovely touch that demonstrates the care and attention given to the overall dining experience.

My Choice – Cornish Hake (British Vibes)

My choice from the British Vibes section of the menu was the Cornish Hake.

The dish was served with:

  • Jersey Royal potatoes
  • Hodmedod’s marrowfat mushy peas

I also added a side of greens with lemon and garlic.

The hake was beautifully cooked, with delicate flakes of perfectly moist fish that simply melted apart. The Jersey Royals added a comforting, buttery texture, while the marrowfat mushy peas brought freshness and plenty of flavour. The lemon and garlic greens completed the plate perfectly, adding colour and balance without overpowering the fish.

Every component worked together to create a refined yet comforting meal that celebrated quality British ingredients.

The Perfect Wine Pairing

To accompany my meal, the menu recommended a Three Choirs Classic Cuvée (175ml) from neighbouring Gloucestershire.

Produced using Seyval Blanc, Phoenix and Pinot Noir varieties, the sparkling wine delivered fresh green apple, stone fruit, biscuit and brioche notes.

The crisp acidity complemented the hake beautifully while the subtle richness echoed the buttery potatoes, making this an excellent pairing.

Other Dishes Around the Table

Three members of our group chose the L.F.F. Shropshire Lamb.

Served with Hodmedod’s green lentils, seasonal greens, tomato and olive salsa, it arrived looking incredibly colourful and beautifully presented.

The vibrant vegetables contrasted perfectly with the tender lamb, creating a dish that looked every bit as impressive as it tasted. Judging by the comments around the table, everyone thoroughly enjoyed their meals.

It’s always encouraging when every member of a dining group leaves equally satisfied.

Warm Service Throughout

The staff were welcoming from the moment we arrived and remained attentive throughout our visit.

Service was relaxed, professional and never rushed, allowing us plenty of time to enjoy both the food and the wonderful surroundings. The team clearly takes pride in showcasing the restaurant and ensuring guests have an enjoyable experience.

Final Thoughts

CSONS Hereford offers far more than simply a meal. Its stunning riverside location, beautifully restored Pavilion, commitment to local producers and imaginative seasonal menu combine to create a memorable dining experience.

The carefully considered wine pairings add an extra dimension, while the quality of the cooking demonstrates genuine respect for outstanding local ingredients.

Rachel certainly chose well, and our entire group thanked her afterwards for introducing us to such a fantastic restaurant.

If you’re visiting Hereford Cathedral, exploring Castle Green or simply looking for somewhere special to eat beside the River Wye, CSONS deserves a place at the very top of your list.
